Our family has a new weekend favorite treat -- these adorable little sliders! They really do taste like White Castle burgers, only better, and fresher.
I made several large pans of these for Abby's graduation party, which worked out great for a crowd. But for a smaller group on a lazy Sunday afternoon, there's a simpler way:
Dice 1/2 of a large yellow onion, and carmelize in 1 teaspoon of butter in a large saute pan (I like to use my 12" cast iron pan). This takes about 10 minutes on low heat.
Season onions with salt and pepper, and shape into a 9 inch square. Spread 1 pound of ground beef on top of the onions, and season the beef also. Cover with a lid (I don't have one, so I use a cookie sheet) and cook 5 - 7 minutes, or until beef is browned on top and cooked through.
Lay 4 slices of American cheese on top, and cover for another minute or two, until melted.
Here's another simple tip -- there's no way I'm paying $4 for a pack of 12 tiny slider buns at the store. Lop the ends off of hot dog buns, then cut in half, and you've got the perfect size for your mini burgers! Use the money you have saved to splurge on some healthier organic, grass-fed beef, and you'll feel great about feeding your family this yummy treat.
Cut beef into 16 pieces, and top with pickle slices and ketchup.
