Big, fresh, local cucumbers are popping up everywhere here in Dallas! A friend of ours who is a chef at Whole Foods served this salad at a party last fall, and it's been a favorite of ours ever since. This delicious salad, swimming in a tart and tangy dressing, is a healthful addition to any Mediterranean or Middle Eastern meal. (A favorite accompaniment is the Lemon Dill Chicken from Savory Sweet Life.) I hope you'll love this Greek-inspired Cucumber Salad as much as we do.
1 large tomato, chopped
1 cucumber, peeled and sliced
1/4 red onion, sliced thinly and chopped
1/2 cup feta cheese
Handful of kalamata or other olives
Dash of crushed red pepper flakes
Freshly ground pepper
1/4 cup olive oil
2 T apple cider vinegar
Fresh rosemary and oregano, chopped
Combine all ingredients and toss lightly. Refrigerate for at least one hour to allow flavors to develop. Taste and adjust seasonings, if needed. Makes two side servings. Enjoy!
