It's been forever since I've done a food post!! I sure have missed making family dinners, during our busy time we have had for the last two months working on Abby's school musical. It's just not nearly as fun to cook dinners that have to be packed up and eaten on the go.
I swooned when this recipe for Swedish Meatballs popped up on the Tasty Kitchen blog. As usual, I did change it up a bit. The original recipe called for ground turkey, but ground chicken was half price at my grocery store this week, so that's what I used. I also decided to employ the Tyler Florence practice of soaking a couple of slices of fresh bread in cream, rather than using dried bread crumbs. It really kept the chicken from being too dry, and added a creamy richness. Yum.
I will confess that my meatballs aren't even remotely round. More like, trapezoidal, maybe pyramidal, if that's even really a word. Trust me, when you're eating these, you aren't going to care what shape they are.
This is my very favorite part. For years, I thought I couldn't make gravy, and now that I have started, I can't seem to stop! I didn't photograph any other steps of the recipe, but it's all on Tasty Kitchen.
These chicken meatballs were really tender, and moist, and delicious. Now keep in mind that I didn't choose chicken instead of turkey or beef for any reason other than I was craving something different, and chicken was on sale. These were sauteed in a half stick of butter, and I used whole milk sour cream, so they weren't exactly low-calorie. Just a nice change of pace. I also used a lot more sour cream in my gravy, after also adding at least another cup of broth, as I wanted plenty of sauce for leftovers. Next time, I will definitely also add a couple cups of thickly sliced, sauteed mushrooms. Again, you'll find the original recipe here.
Serve the meatballs over egg noodles, tossed in olive oil, and doused with an obscene amount of the sauce. Sprinkled with mambo amounts of freshly chopped dill.
