Here's a festive meal that's really yummy any time of the year! To make it super-healthy, serve with Homesick Texan's Ranch Style Beans (more about these later, amazing . . . )
1 medium yellow onion
2 cloves garlic, at least (we use 4 or more!)
4 large fresh tomatoes, chopped
2 or 3 large chicken breasts (fit comfortably into your pan)
Grated Mozzarella cheese
Salsa Verde (green salsa)
Saute chopped onion in 2 T olive oil for 10 minutes. Add chopped garlic and saute 2 minutes more. Add chopped tomatoes, chicken breasts, cover and simmer for 8 - 10 minutes. Turn chicken over, and simmer another 8 - 10 minutes without lid.
Remove chicken and set aside, to cool enough to shred. Add back to pan and warm through.
Spoon chicken mixture into warmed tortillas. Add cheese, a generous spoonful of salsa verde, and top with cilantro. Avocado slices would be yummy too, but I forgot them this time, dangit.
